Summer Squash, Cucumber Red Onion Marinated Salad and Fresh Green Onions
This time of year we are on the look out for fresh local produce to serve at Bryce’s. The season is just getting started and our first fresh vegetables are summer squash, cucumbers and green onions. Nothing says summer is coming like fresh squash cooked with onions. Another southern favorite is the marinated cucumber salad with red onion. Just a taste of this sweet vinegary salad floods my mind with memories of summers past and is my idea of comfort food.
Summer Squash is one of the most prolific vegetables in our area. Not only are they smooth and delicious they are a good source of antioxidants lutein and zeaxanthin, which have been shown to protect your eyesight. We try to serve squash at every meal! So there you have three good reasons to eat summer squash at Bryce’s:
